Maynard Jacob is the Chocolatier at Copal Tree Farms. Apart from roasting the cacao nibs which are such a delicious part of our new Copalli Cacao, Maynard leads a Bean to Bar Chocolate Class for visitors to Copal Tree Lodge, which transforms our organic cacao into delicious chocolate.

How long have you worked with Copalli?

I have worked for Copal Tree Lodge for more than nine years.

Tell us about yourself.

I am of East Indian descent, but I grew up in Belize. Growing up in Belize is very unique, as we get to live among several different cultures.

How do you spend your spare time?

I am happily married with two kids. I work a lot so, any spare time is spent with my family. We love to go swimming, hunting and fishing.

Why is sustainability important to you?

Sustainability is important to me because it teaches us not to be dependent on anyone. As long as you have good practices, you are able to be self sufficient. Also being sustainable helps to make sure our resources are not depleted, so we protect our future.

What should we know about Belize?

Belize is a very small country, and it’s the only English-speaking country in Central America. We pride ourselves on Democracy. We believe here in Belize if you want to have something in life you have to work for it!!!

Do you have a favorite way to drink Copalli?

I’ve always loved margaritas, so my favorite way of drinking Copalli Rum is in a Daiquiri!
