July 11 is National Mojito day and hold on to your bev naps, we’ve been making them wrong!
According to Ducky, bartender at the Copal Tree Lodge, never muddle your mint — it makes it bitter. Rather, let the ice do the job while shaking. Try it for yourselves and let us know!
- 2oz each of Copalli White Rum
- 1 oz fresh lime juice (seedless limes are best)
- 1 oz simple syrup (equal parts sugar & water)
- 2 large bunches fresh mint
- Soda water
Put two large sprigs of fresh mint into a cocktail shaker. Add rum, lime juice, simple syrup and ice. Shake well. Pour into a tall glass and top with sparkling water. Garnish with more mint and a biodegradeable straw!
