No fruit says summer more than watermelon, and this popular cocktail from the Rum Bar at Copal Tree Lodge makes the best of summer’s luscious fruit.

– 2 oz Copalli Barrel Rested Rum
– 1 oz Lime Juice
– 1 oz Simple Syrup
– Watermelon Chunks

Instructions:  Add watermelon chunks to a shaker, muddle. Add remaining ingredients and ice. Shake until chilled. Strain over clean ice and garnish with mint and lime wheel.
