Visit the Copal Tree Distillery and you’ll likely stay at the Copal Tree Lodge where you’ll experience the welcoming hospitality of Belize, not to mention the delicious farm to table menu and of course delicious Copalli Rum cocktails.
Making sure that the bar stays stocked and guests stay blissfully sated is Mark Carlos Edwards, the Food & Beverage Manager at the Copal Tree Lodge.
Tell us about your responsibilities…
I am the Food & Beverage Manager at Copal Tree Lodge. To sum up my role, I must ensure that everything that entails food and drink is fully stocked, readily available to staff, and our guests experience the best service of whatever they order.
How long have you worked at Copal Tree Lodge?
I have worked at the Lodge for more than 10 years.
Tell us about your life in Belize.
Most people think that Belzie is a third-world country and forgotten, but this place I call home has everything to offer me. Life in Belize is wonderful and beautiful. I have access to all of my basic needs and some of my wants.
What do you do in your spare time?
For my spare time, my family and I travel and explore our small country. Or, we may decide to spend time with our extended family.
Why is sustainability important to you?
Sustainability is important because it allows us to protect and preserve everything within our environment so that generations to come will enjoy the same wonders of our country that we are now priviledged to experience.
What would you like people to know about Belize?
I would like people to know that our small country has so much to offer, things to do and see. From our pristine sandy beaches, to our great barrier reef, our inland jungles and particularly our melting pot of culture.
What is your favorite way to drink Copalli Rum?
For me, the best way to enjoy Copalli Rum is our Watermelon Smash, made with fresh lime, mint and watermelon. So, if you ever visit Copal Tree, make sure to ask for a Smash!
