Copal Tree Farm is located adjacent to the distillery in the heart of the rainforest in Southern Belize. It is here, where the organic, non-GMO, heirloom sugar cane is harvested.
Fun fact: this was the first certified organic farm in Belize.
- Within two hours of harvesting, the cane is shredded and pressed to maximize the freshness of the cane juice.
- Fresh-pressed sugar cane juice is at the heart of Copalli Rum – not commercial grade molasses used by so many other rums.
- Yeast ferments the fresh sugar cane juice before distillation resulting in the perfect output.
- Pure rainforest canopy water adds a soft and fresh flavor profile to Copalli Rum.
- Copal Tree Distillery prioritizes slightly less efficient processing and a lower yield per pound of sugar cane in favor of richer and more complex taste profiles.
- While many other rums add additional color, flavor, or sugar, we add nothing extra. Just pure, delicious rum from three ingredients.
A Goal Of Zero Impact
ECO-FRIENDLY DISTILLERY
- The distillery is designed to have as small a carbon footprint as possible. The stills are powered by sustainable, regenerative biomass, and the process supports the full-circle conversion of waste from production into agricultural inputs.
- Instead of burning the sugar cane fields before harvesting (as many commercial sugar and rum operations do), the organic sugar cane is harvested and the leaves are left to regenerate for the next harvest season. This helps recycle enriching CO2 back into the soil. Plus, not burning the fields prevents pollution!
- Driven by our zero-waste goal, after we extract the complex and flavorful sugar cane juice, the leftover stalks of the sugar cane are dried and used to fuel the distillery boiler, which heats the stills and the cooling system. Then the ash is used to fertilize the cane fields.
- Any wastewater from the distillery goes through a filtration system and into retention ponds. From there, it’s used to water plants and crops. Separately, we capture rainwater at the distillery and use that for blending the rum. When we say, our goal is zero waste, we mean it!
Philanthropy
Supporting the local community
- The founders have spearheaded the local community’s philanthropic support in Southern Belize for more than 20 years through a lasting legacy of rainforest preservation, marine conservation, and the support of local education and cultural organizations.
- Every part of the rum is sourced, distilled, barreled, aged, and bottled at Copal Tree Farm and Distillery in rural Southern Belize.
- Together with the neighboring Copal Tree Farm and Lodge, Copal Tree Distillery is the largest non-government employer in Southern Belize and pays well above the Belizean national salary.
