Ducky’s Daiquiri

- 2 oz Copalli White Rum
- 1 oz Ducky’s Mix (2:1 passion fruit to cinnamon syrup)
- ½ oz lime juice
- ½ oz simple syrup
- 1 dash of Angostura bitters
L/H, double strain, coupe glass, garnish w/ lime wedge & flamed cinnamon sliver


Mayan Tai

- 2 oz Copalli Barrel Rested Rum
- 1 oz Lime juice
- ½ oz dry curacao
- ½ oz orgeat
Build in tin, whip w/ 1oz crushed ice, dump into DOF, add crushed ice and swizzle to level, insert straw and mound crushed ice on top, garnish w/ edible orchid and mint bouquet (optional powdered sugar dusting)


Copalli Mojito

- 2 oz Copalli White Rum
- 1 oz lime juice
- ¾ oz mint simple syrup
- Fat pinch of mint
- 1 oz Soda water
Clap mint, M/M, add soda water to tin, place pinch of fresh mint in bottom of collins glass and then add cubed ice, strain, top w/ crushed, garnish w/ mint sprig bouquet


Copalli Pomegranate Collins

- 1 ½ oz Copalli Barrel Rested Rum
- ¾ oz Pama liqueur
- ½ oz lime juice
- ¼ oz honey syrup
- Pinch of mint
- 2 oz Soda water
Clap mint, M/M, add soda water & strain, collins glass, garnish w/ mint sprig bouquet & lime wedge


Copalli Sour

- 1 oz Grapefruit juice
- ¾ oz agave syrup
- ½ oz Campari
- ½ oz lime juice
M/M, DOF, garnish w/ mint & grapefruit slice


Daisy de Punta Gorda

- ¾ oz lime juice
- ½ oz agave syrup
- ½ oz Yellow Chartreuse
L/H, splash of soda water, double strain, Absinthe rinsed coupe, mint sprig bouquet & lime wedge


Copalli Negroni

- ¾ oz sweet vermouth
- ¾ oz Campari
- ¼ oz dry curacao
- 2 dash angostura bitters
Stirred down on rocks, double old-fashioned glass, garnish w/ orange twist


Toledo Six Shooter

- 1 oz coffee liqueur
- 2 dashes chocolate bitters
- 2 dashes orange bitters
Stirred in mixing glass, orange oil in chilled cocktail glass, garnish w/ orange twist


Belizean Howler Monkey

- 2 oz Copalli White Rum
- ½ oz fresh lime juice
- ¼ oz vanilla syrup
- 1 dash Angostura bitters
- 4 oz chilled Ginger Beer
Combine all ingredients in an ice filled Collins glass and stir gently to combine. Garnish with lime wedge


Passionate Apple

- 2 oz Copalli White Rum
- ½ oz Fresh lime juice
- 1oz passion fruit syrup (commercial or see below)
- 3 oz chilled quality dry apple cider
- 1 oz chilled seltzer water
Combine all ingredients in an ice filled Collins glass and stir gently to combine. Garnish with lime wedge


Jaguar Pizz

- 2 oz Copalli Barrel Rested Rum
- ¼ oz cinnamon Syrup
- 4 dashes Angostura Bitters
Combine all ingredients in a mixing glass and fill with ice. Stir until chilled and strain into an old fashioned glass with a single large ice cube in it, garnish with lime twist


Shark Bite

- 2 oz Copalli White Rum
- ½ oz Blue Curacao
- ¾ oz Falernum
- ¾ oz fresh lemon juice
Build in blender & fill with 14 oz with pellet ice. Blend until smooth & thick. Pour into shot glasses and drizzle with grenadine


Mayan Ritual

- ½ oz Averna
- ¼ oz Tempus Fugit Crème de Cacao
- 10 drops Bittermens Xocolatl Mole Bitters
Combine all ingredients in a mixing glass and fill with ice. Stir until chilled and strain into a chilled coupe. Garnish option of: shaved/micro planed cocoa nibs or cinnamon stick or nutmeg


Tipsy Toucan

- ¾ oz banana liqueur
- ¾ oz coconut cream
- ¾ oz fresh lemon juice
- ¾ oz fresh orange juice
- Dash Angostura bitters
Shake strain into champagne flute with 1 oz of chilled soda water at the bottom. Garnish with an orange twist spiral in the drink
